I LOVE salad. I love that every green leafy veggie I chew thoroughly is acting like a broom and cleaning out the plaque build-up in my vessels and arteries. I love that there is so much nutrition and vitamins and YES PROTEIN in greens and other veggies.
But mostly, I love the flavors and colors in my salads. I didn't get this much overall joy out of eating previously. Don't get me wrong, I've always loved to eat, but I truly admire the flavors and textures now more than before. I don't feel guilty for indulging and enjoying and I can be happy knowing that all that flavorful goodness is healing and not harming. It is truly a win-win.
So, what do I like on my salads? I love an assortment of stuff:
Greens of all varieties, tomatoes, cucumbers, zucchini, unsalted beans, radish, daikon radish, carrots, peppers, fresh or pickled beets, green beans, organic corn, sweet potatoes, raisins or dried cranberries, and the list goes on...
What do I top my salad with? Not much usually, I like to eat my salads as is, but sometimes I add some toppings like zesty salsa, balsamic vinegar, lemon or lime juice, oil free low sodium salad dressings, guacamole (as an occasional treat).
