Starch isn't the French Fries dripping in oil that many people consider their "vegetable" (right alongside the ketchup that makes up their other vegetable), rather it is whole foods in their least processed form, like a bake potato or whole grain rice or quinoa. We need to have starch be the main focus of our plate each meal in order to feel satiety and then round out the meal with greens and other non-starchy veggies and fruit.
