1 cup raw rolled GF oats
1/2 C Puffed millet cereal
1 cold cooked medium/small sweet potato (yam)
2 T ground flax seed...
1 C almond milk
Cinnamon to taste
Drizzle pure maple syrup
Stir all to combine well. Tastes like pumpkin pie in a bowl, served cold. Yum!
You could add any spices that sound good to you, but I used a lot of cinnamon and a little maple syrup. The yam carries the flavor and texture. My yam was cooled whole in the fridge with the skin intact and the condensation inside the container made it a very wet and soupy texture rather than flaky. I cut it in half and squeezed each half from the skin into my bowl and stirred. If the potato was flaky it wouldn't work as well. Needs to be canned pumpkin texture softness. Enjoy!
